Pulled BBQ Chicken
3-5 raw, boneless chicken breast halves 1 cup P&K BBQ Sweet Sauce 1 - 12 oz can of Coca-Cola or Pepsi Put chicken breasts in a large pot or Dutch oven. Add BBQ sauce and 12 oz can of pop. Bring to a slight boil, then turn down to a slow simmer for 1 ½ hours. Near the end of the cooking time you can begin to pull the meat apart with a fork to shred. Serve plain or on a bun. *You could add the P&K Spicy BBQ sauce if you prefer. Submitted by “Cousin Denise” P&K BBQ Pineapple Meatballs"Here’s the recipe I use for the meatballs my family and friends love" ½ cup P&K Sweet BBQ Sauce ½ cup crushed pineapple in juice 30 frozen meatballs (smaller size) Mix the sauce and pineapple together in a sauce pan. Add meatballs and stir to coat them. Cook to heat through, approx. 15 minutes on low to medium. Tip: I usually make a double or triple batch and then put in a crockpot to keep warm and serve. 2 pkgs. of bacon
2 lbs. shrimp with tails (cooked, peeled, and de-veined) 1-18 oz bottle P&K Sweet BBQ Sauce Preheat oven to 350 degrees. Cut the bacon into half strips (it’s easiest to cut the whole pack at once). Cook the bacon for about 2 minutes on high in the microwave; approx. 10 half slices at a time, between two sheets of paper towel, or until bacon is cooked but NOT crispy. Wrap shrimp (frozen or thawed) with half slice of bacon. Start close to the tail and slide the bacon slightly forward on the shrimp to tighten the wrap. Lay shrimp wraps in a single layer in a 9x13 inch baking dish. Generously coat the wrapped shrimp with P&K BBQ Sauce. Bake for 15 minutes. Serve hot or chilled. Spice it up by adding some P&K Spicy BBQ Sauce! |
Mom's BBQ Calico Beans
1 - 15 oz can white kidney beans 1 cup cooked ham, chopped 1 - 15 oz can dark red kidney beans ½ cup cooked bacon, crumbled 1 – 28 oz can navy beans ½ cup onion, chopped 1 – 15 oz can black eyed beans 1/3 cup P&K Sweet BBQ Sauce ½ lb. cooked hamburger 2 Tbsp P&K Spicy BBQ Sauce Mix all ingredients in large bowl. Bake in 3 quart baking dish or 9 x 13 baking pan, uncovered. Place in 350 degree oven for 75 minutes. Family Favorite Sloppy Joes3 lbs. ground chuck burger ¾ cup onion, chopped 1 cup P&K Sweet BBQ Sauce 1/3 cup brown sugar 1/4 cup yellow mustard 1/3 cup ketchup Brown the burger in a large skillet. After burger is fully browned, remove any grease that is in the burger, Add other ingredients to the burger in the skillet. Stir all ingredients so they are mixed in well. Simmer for 10 minutes. Serve on buns. Venison Neck Roast
In a large cast iron Dutch kettle place neck roast and a small pork roast. Cover with a pound of thick bacon and a good size sweet onion add a bottle of beer ( a good amber is best ) and a dash of pepper. Cover and place in oven at 300 for about three hours. Then remove neck bone and add potatoes and carrots. Place back in oven at 350 till Veggies are done. You can make a gravy with some of the juice.
